Spice in the Kitchen: Vegan Salty Peanut Butter Hot Chocolate

When my rosy cheeked daughter ran inside from last weekend's snow, she begged me to make hot chocolate. Being me, I couldn't simply rip open a pack of Swiss Miss. I had to work my magic on ye olde chocolat chaud. Hmmm... peanut butter and chocolate? Yes! Two great tastes that taste great together!

This thick style of hot chocolate is called "sipping chocolate." You only need a small espresso sized cup to feel satisfied. If you increase the chocolate by 1/2 and place the completed mixture in the fridge, it will magically turn into a smooth pudding overnight!

You can use any non-dairy milk, but I am super sold on coconut milk now (in a carton, not a can!). Its flavor is creamy, neutral and adaptable.

Vegan Salty Peanut Butter Hot Chocolate
serves 2

  • 1 cup coconut milk
  • 1/2 cup semi sweet chocolate chips
  • 1-2 TB creamy natural peanut butter (according to taste)
  • 1/2 tsp vanilla
  • dash freshly ground Pink Himalayan sea salt
  1. In a small sauce pan, heat coconut milk over medium heat.
  2. Add the remaining ingredients and continuously whisk until the chocolate is completely melted and the peanut butter is well combined. Serve in small mugs or espresso cups.

  3. This is fabulous! I mean, hot chocolate is always fabulous, but I love flavored hot chocolate! I saw a banana hot cocoa recipe recently that also sounded great.
