Spice in the Kitchen: How to Roast Pumpkin for Pies

1) Preheat oven to 425. Slice pumpkin in half. Small (or sugar) pumpkins work best for pies.

2) Scoop out seeds and strings. A pumpkin scooper from a pumpkin carving set works great for this!

3) Fill a glass baking dish with 1/4" of water. Place pumpkin halves in dish cut side down.

4) Bake pumpkin in pre-heated oven for 35-45 minutes or until the flesh can be pierced easily by a fork and the rind becomes bubbly/wrinkly looking.

5) Scoop out the cooked flesh, let cool and store refrigerated in a glass container until ready to use. Use within 3 or so days.
