Spice in the Kitchen: Easy Onionless Tomato Salsa

Mojito sparkling water w/ homegrown mint and our friends brought a salad with beets and lemon cucumbers from their CSA share. Salsa's in my new bowl. I decided to keep it.

Tip: After the burritos are stuffed, grilling them  makes them  crunchier, extra yummy and super fancy.

We had our good friends over for dinner the other night and we all (including the gaggle of children) had a great time. I served two types of burritos (one with the filling pictured above and a traditional one of beans, cheese and rice), CSA salad, virgin mojitos (mint from my herb garden!), guac, tortilla chips, and homemade onionless salsa. Such a yummy meal and most of it was locally grown. Aren't we so eco-hip?

Easy Onionless Tomato Salsa Recipe (vegan)
serves 6; prep time, 10 minutes


  • 2-3 chopped tomatoes (In the end, you want about 4-5 cups)
  • juice of one lime
  • 1/2 TB Spanish olive oil
  • 1 TB red wine vinegar
  • 1 TB pureed cilantro
  • 1 TB chopped fresh parsley
  • 2 TB chopped, mild pickled jalapenos
  • 1/2 tsp hing (Hing (or asafoetida) is a spice used in Indian cooking. Gives an oniony taste without the aftertaste or scent of onions. Just omit if you can't find it.)
  • salt to taste


  1. Combine all ingredients in a bowl.
  2. Chill 1/2 hour before serving if possible.


  1. I'm so loving heirloom tomatoes right now. They're so much sweeter and juicier than crappy, plain tomatoes.

  2. I agree with Bianca. Heirloom tomatoes put average, commercial tomatoes to shame. I definitely miss being able to grow heirlooms in the backyard (squirrel issues), but hey, there's always the farmers market. :) A burrito party sounds like so much fun and deliciousness!!
