Spice in the Kitchen: Coconuty Chocolate Chip Cookies

Coconut Flour and Coconut Milk Chocolate Chip Cookies (with Lime Zest and Rum!)
I've been loving coconut flour. I came up with this recipe this morning and baked them as a thank you present for the staff at my daughter's school. It was her last day! The summer has officially begun!

Spice in the Kitchen: Coconuty (Lime) Chocolate Chip Cookies Recipe (veganizable)
Makes 4-5 dozen; time involved 30-45 minutes

  • 1 1/2 cups flour
  • 3/8 cup of coconut flour
  • 1 t baking soda
  • dash salt
  • 1 cup of butter or vegan margarine
  • 1/2 cup packed light brown sugar
  • scant 1/2 cup vegan sugar
  • 1 TB agave nectar or light molasses
  • 1/2 cup light canned coconut milk
  • 1 tsp vanilla
  • 1 tsp coconut extract
  • 1 bag semi-sweet chocolate chips
  • (options: also add 1 TB finely grated lime peel + 2 tsp imitation rum extract)

  1. Preheat oven to 350.
  2. Sift flours, baking soda and salt.
  3. Combine sugars and butter or margarine. Add coconut milk and agave. Add vanilla and favorings.
  4. Add flour mixture to wet mixture.
  5. Fold in chocolate chips.
  6. Drop 1 TB balls of the cookie mixture on a baking sheet with lined with parchment paper. Flatten cookies to about 1/2 inch.
  7. Bake for 8-10 minutes. Let cookies cool on sheet for a minute before moving to a cooling rack.
