Spice in the Kitchen: Vegan Chex Muddy Buddies

So you have a ton of vegan AND gluten-free party favors to make or you need to make gifts for all your extended family for Christmas, Easter, Fourth of July, insert-random-holiday and you're short on time? BUT! You don't want to sacrifice addictiveness or the "give me that recipe" factor? Chex Muddy Buddies to the rescue!

I first had this snack as a sample in an Amish nut shop at a local farmer's market and quickly polished off a bag without even realizing I had eaten 8 cups worth (ok, maybe not 8, but that was a big bag!). Muddy Buddies a very serious "trigger food." Once you pop, you can not, I repeat, can absolutely not stop.

It is super simple to make, and the best part, easy to make in bulk. Whip up a batch and package it up pretty in a cello bag tied up with a designer ribbon and a handmade tag or in a Chinese-style take out container, or oh! in a pretty mason jar.

Vegan Chex® Muddy Buddies Recipe
(vegan, gluten-free [make sure all ingredients are gf if need be])
makes about 10 cups

  • 9 cups Rice Chex®, Corn Chex® or Chocolate Chex® cereal (or combination)
  • 1 cup semisweet chocolate chips
  • 1/2 cup peanut butter
  • 1/4 cup Earth Balance
  • 1 tsp vanilla
  • 1 1/2 cups powdered sugar
  1. Into a large bowl, measure cereal; set aside.
  2. In 1-quart microwavable bowl, microwave chocolate chips, peanut butter and butter uncovered on High 1 minute; stir. Microwave about 30 seconds longer or until mixture can be stirred smooth. Stir in vanilla. Pour mixture over cereal, stirring until evenly coated. Pour into 2-gallon resealable food-storage plastic bag.
  3. Add powdered sugar. Seal bag; shake until well coated. Spread on waxed paper to cool. Store in airtight container in refrigerator.


  1. This recipe definetly looks different! I can't eat peanuts tho so I was looking at other recipes to see what was out there!
