Spice in the Kitchen: Roasted Red Pepper Hummus Wrap

I admit, I don't make everything from scratch. I just don't have the time and suspect that if you've got kids, a job, a house and/or a social life, you don't either. I do, however, try to buy prepared foods that are the least processed and most natural. This quick and easy lunch proves that with some smart shopping and a few minutes of prep, you can make a satisfying lunch that is good for your health and totally blows away any drive-thru bag o'garbage you might be tempted to grab at lunch time.

This wrap was seriously so good that I want to eat it for dinner too! The nuttiness of the arugula pairs so nicely with the caramelized sweetness of the tomatoes which is cut by the tartness of the hummus.

Spice in the Kitchen: Roasted Red Pepper Hummus Wrap with Grilled Heirloom Tomatoes and Orange Peppers and Baby Arugula (vegan)

*All the ingredients are available at Trader Joe's, but you should be able to pick them up in any good grocery store.
  • 1 Whole Wheat Tortilla
  • 2 TB roasted red pepper hummus
  • 1/2 orange pepper, cut into strips
  • 3/4 cup of mini heirloom tomatoes (or grape tomatoes), cut in half
  • 2 cups of baby arugula
  • Other good additions: lightly grilled asparagus and avocado (and a sprinkle of pine nuts!)

  1. Heat a cast iron pan. Place tomatoes cut side down on pan and throw the pepper strips on there (don't use oil). Don't stir them--let them brown and wilt (about 3-5 minutes), then stir for a minutes or two.
  2. Shut off heat.
  3. Place tortilla on top of veggies to warm it up.
  4. Once the tortilla is warm and limp, spread the hummus in the middle of the tortilla. Top with grilled veggies and then top with baby arugula. Fold in sides and then roll it up like a burrito.
