Spice in the Kitchen: Warm Brussels Sprout Salad with Walnuts

I made this for lunch the other day and had no intention of creating a recipe for it, but Mr. Scissors loved it and thought it would be a good one for the blog, so here you go!

Warm Brussels Sprout Salad with Tofu, Walnuts, Apple and Dried Cherries (vegan)
serves 1 or 2

  • 3 cups of thinly sliced brussels sprouts
  • olive oil for frying
  • 1-2 tsp brown prepared mustard
  • salt and crushed black pepper to taste
  • 1/4 cup of chopped walnuts
  • Baked tofu, chopped into small cubes
  • 1/2 cup of peeled, cubed apples
  • 1/3 cup of dried cherries (Trader Joe's Montmorency are my favorite.)
  • walnut creme sauce (Recipe on Scissors and Spice!)

  1. Toast walnuts, set aside. Fry tofu, set aside.
  2. Fry brussels sprouts and apples in olive oil. Turn frequently until they start to brown. Add mustard, salt and black pepper and stir until mixed. 
  3. Toss sprouts mixture with walnuts and tofu.
  4. Plate and top with cherries and walnut creme sauce.
