Spice in the Kitchen: Vegan Chocolate Banana Cake

The heart cake may have been one of my first cakes, but I have been making cupcakes for a few years now. Cupcakes are far less intimidating! Make one mistake, and you've got a couple of dozen others to make up for it.

This is my concoction of a traditional wacky cake. No matter what vegan cake recipes I try, nothing can beat the moistness and ease of a wacky cake!

Vegan Chocolate Banana Cake (or Cupcakes) Recipe
(makes 24 cupcakes, 1 sheet or 2 round layers)

  • 3 cups of flour, sifted
  • 2 tsp baking soda
  • 2 cups sugar (you have to use very fine sugar, the large crystal vegan sugar does not work well)
  • 1 tsp salt
  • 1.5 tsp espresso powder
  • 8 TB cocoa, sifted
  • 1/2 cup of ground up vegan chocolate chips
  • 3 tsp vanilla
  • 2 TB apple cider vinegar
  • 1/2 cup oil
  • 2 cups water
  • 2 medium, ripe, puréed bananas

  1. Pre-heat oven to 350.
  2. Mix dry ingredients in a mixing bowl. 
  3. Make three impressions in the dry mix with the back of a measuring cup. Vanilla goes in one, vinegar in the other and lastly, the oil.  
  4. Pour water and banana purée over the the dry mix and mix well.
  5. Bake in one 9x13, two round (lined with parchment) pans for about 30 minutes or until a toothpick inserted in the center comes back clean. For cupcakes, bake for 18-20 minutes.
  6. Top with your favorite frosting or ganache. A nice filling would be a peanut butter concoction--like a PB mousse. Two great tastes that taste great together!
