Spice in the Kitchen: Braised Ginger Baby Bok Choy

This is a very simple and very satisfying Asian-style side dish. So simple to make and so good!

Braised Ginger Baby Bok Choy Recipe (vegan)
serves 2


  • 4 heads of baby bok choy, washed and sliced in half lengthwise
  • 1 TB peanut or olive oil
  • 1/2 TB sesame oil
  • 1-2 TB of minced ginger
  • 1/16 tsp of red curry paste
  • 1/2 cup of veggie broth (or water)
  • 1-2 TB of soy sauce


  1. Add oil to pan over medium high heat. Add ginger and curry and fry for a minute. 
  2. Add the boy choy, face down. Fry for a few minutes or until the boy choy gets seared, then flip them over and fry the other side.
  3. Add the broth and and soy sauce and lower the heat to medium low. Cover and let cook for about 5 minutes.
  4. Uncover and cook until the broth reduces in volume and thickens. About 3-5 minutes. Serve hot.
